A sampling of our Chicken Entrees

 

Mongolian Chicken Stir-Fry

Slices of chicken breasts infused in Chinese flavored marinade and then stir-fried with fresh vegetables

and topped with delicious sauce of fresh tangerine juice, rice wine and hoisin sauce.

 

Spicy Peanut Chicken Stir-Fry

Tender chicken breast slices stir-fried in a peanut satay sauce with bell peppers, scallions, mushrooms,

carrots and celery.  Fabulous over sesame noodles or steamed rice.

 

Imperial Chicken Lo Mein

Classic stir-fry of fresh broccoli, red and yellow peppers, pea pods and onions in a rich brown sauce

served over noodles.  Deeply flavorful without being spicy hot.

 

Evil Jungle Princess Curry

Stir-fry chicken and assorted fresh vegetables in a spicy Thai red curry and peanut sauce with

lemongrass, kiffir lime, and Thai basil. A symphony of flavors burst in your mouth!

 

Chicken in Panang Curry-Ginger Sauce

Slices of chicken breast and assorted fresh vegetables cooked in mild coconut milk curry-ginger sauce

topped with fresh cilantro. An addictive flavor!

 

Thai Green Curry

Classic spicy Thai dish of chicken and assorted fresh vegetables simmered in a flavorful coconut-milk base

with kiffir lime leaves and cilantro.  Serve with steamed rice to balance out the heat.

 

Chicken in a classic Sweet & Sour Sauce

A flavorful dish of chicken breast deep-fried in batter mixed with assorted fresh vegetables

topped with delicious Sweet & Sour sauce. NO MSG!!!

 

Chinese Cashew Chicken

Slices of chicken breast stir-fried with peapods, water chestnuts, green onions, and mushrooms

in a mild sauce and topped with toasted cashews. Comfort food with an Asian twist.

 

Chicken & Cheese Enchiladas

Tender pieces of chicken breast, Mexican cheeses and sour cream folded in corn tortillas and

smothered in my home-made Enchilada sauce. Topped with green onions and black olives.

 

Southwest Turkey Meatloaf

Wonderful Mexican flavors mixed with low-fat ground turkey yields a delicious and healthy meatloaf

topped with salsa.

 

Chicken & Goat Cheese Quesadillas

Shredded chicken breast, green peppers, jalapeo peppers, sweet corn, and fresh cilantro blended with

tangy goat cheese, cumin and ground chili in flour tortillas grilled until warm and creamy.

 

Tex-Mex Chicken Fajitas

Slices of chicken breast marinated in traditional flavors of the southwest, grilled with sweet onions

and red & yellow peppers accompanied with flour tortillas, sour cream and shredded cheese toppings.

 

Creamy Cajun Chicken Pasta

Slices of Cajun-seasoned chicken breast in a creamy Parmesan sauce with sun-dried tomatoes,

sweet bell peppers, sliced green onions served over your choice of pasta. 

Your taste buds will tingle with these flavors!

 

Caribbean Islands Spiced Chicken

Grilled boneless chicken breasts rubbed with a Caribbean inspired spice blend of cumin, chili,

cinnamon and cayenne served with pineapple-onion chutney.  Serve over couscous and garnished

with fresh cilantro.

 

Chicken & Artichokes

Boneless chicken fillets and artichokes in a saucy blend of lemon, honey, and thyme; finished off with

crumbled Feta cheese and fresh parsley.  Wonderful served over angel hair pasta.

 

Chicken Marabella

Flavors reminiscent of southern Spain.  White and dark chicken pieces, apricots, green olives,

dried plums and capers marinated in white wine and brown sugar. Beautiful served over yellow saffron rice.

 

Chicken Provencal

The richness of chicken thigh in a south-of-France sauce of diced tomatoes, thyme, oregano,

Herbes de Provence, lemon, fresh parsley and Nicoise olives.

 

Chicken Athena over Orzo pasta

Bite-size pieces of chicken breast and artichoke hearts sauted with onion, garlic, basil,

oregano, and diced tomatoes; finished off with fresh parsley, Feta cheese and served over orzo pasta.

Flavors reminiscent of sunny Greece.

 

Indian Tandoori Chicken

Chicken pieces marinated in a tangy sauce of yogurt, cumin, coriander, ginger and turmeric.

Chicken is cooked on a bed of sliced onions keeping it moist and flavorful.  Delicious over saffron rice.

 

THE CLASSICS:

 

Chicken Parmesan

Cutlets of Parmesan-crusted chicken breasts topped with melted Mozzarella and covered

with my home-made marinara sauce.  Great over linguine.

 

Chicken Marsala

Classic preparation of sliced chicken breast and mushrooms in a creamy Marsala wine sauce. 

For a decadent experience, I can add some Gorgonzola cheese....delish! 

For those interested in a low-fat version, I can modify this recipe to eliminate the cream.

 

Classic Chicken Piccata

Thin escallops of chicken breast sauted in extra-virgin olive oil and finished off in a

fresh lemon sauce with large caper berries and chopped fresh parsley.

 

Divine Chicken Divan

Traditional recipe of slices of chicken breast layered with fresh broccoli and Gruyere cheese

in a white wine sauce. A complete meal in one dish.

 

Chicken in Tarragon Sauce

Slices of chicken breast and mushrooms in a creamy sauce flavored with Tarragon and Dijon mustard. 

Classic flavors of Paris. A low-fat version is available.

 

Chicken Cordon Bleu

Chicken breasts filled with Swiss cheese, ham and spinach sauted till golden brown and baked until

centers are a creamy fusion of flavors; topped with a tangy honey-mustard sauce.

 

Home-made Chicken Pot Pie

Delicious comfort food of chicken breast, onions, carrots, celery, and mushrooms in a creamy white sauce

topped with a butter-flaky crust.

 

 

This selection represents just a sampling of the wonderful chicken dishes  available.

The menu changes on a seasonal basis, so you will enjoy a wide variety of delicious entrees all year long.
